Vegetable soup with chickpeas and red beans - perfect for colds

If you have a cold or are suffering from stomach problems, our vegetarian soup is perfect for you. It is super quick and easy to prepare and contains many nutrient-rich ingredients and is also very easy to digest.

Ingredients:

  • 100g chickpeas (fresh)
  • 100g red beans (fresh)
  • Garlic
  • a vegetable onion
  • turmeric
  • sth. pepper
  • 1L water
  • some coriander or parsley
  • chives
  • fresh spinach
  • Spring onions
  • sth. lime juice

Preparation:

  1. Soak the chickpeas and red beans overnight.
  2. Fry the onion together with garlic, turmeric and pepper until translucent.
  3. Pour 1L of water over the onion and garlic mixture and then add the beans and chickpeas. Bring to the boil slowly at a low temperature until the chickpeas and beans are cooked.
  4. Then add the fresh herbs (coriander, chives, fresh spinach and spring onions) and serve in a bowl.
  5. Finally, drizzle some lime juice over it and season with salt and a little pepper.
