Ingredients for 3 people
- ½ onion
- 2 tablespoons oil
- 200 g red lentils
- 1 tsp red curry paste (from the jar)
- ½ can (400 ml) coconut milk
- ½ l vegetable stock
- 100 g broccoli
- Salt, pepper, sugar

Preparing the ingredients
Peel the onion and dice finely. Heat 2 tablespoons of oil in a large pan and sauté the onion. Add the red lentils and red curry paste and sauté briefly. -
Cooking the lentils
Add coconut milk and vegetable stock, bring to the boil and simmer for about 20 minutes until the lentils are soft. -
Preparing broccoli
While the lentils are cooking, wash the broccoli and cut into small florets. Heat 2 tablespoons of oil in a pan and fry the broccoli for about 5 minutes. Season with salt and pepper. -
Puree the soup and season to taste
Remove 4 tablespoons of the cooked lentils from the soup and set aside. Puree the soup finely with a hand blender. Season with salt, pepper and a pinch of sugar and bring to the boil again. -
Serve
Serve the soup in bowls and garnish with the broccoli florets and the reserved lentils.
