Pepper rings are not only a feast for the eyes, but also a delicious way to enjoy vegetables in a particularly tasty way. This simple recipe combines crunchy pepper rings with a wonderfully creamy cheese filling that is prepared in no time. Perfect for a quick meal or as an appetizing snack in between meals!
Ingredients:
- 2 peppers (e.g. red and yellow)
- 2 spring onions
- 2 stalks of fresh basil
- 100 g feta cheese
- 100 g cream cheese
- 1 egg (size M)
- 100 g grated cheese (e.g. Gouda)
- Salt
- pepper
- Fresh parsley for garnish
Preparation:

Preparation of the pepper rings:
- Preheat the oven to 200 °C top and bottom heat.
- Wash the peppers, halve them and remove the core. Then cut each into 4 rings of equal thickness and place on a baking tray lined with baking paper. Finely dice the remaining pepper flesh and set aside.

Preparing the filling:
- Wash and clean the spring onions and cut into fine rings. Also wash the basil, shake dry and chop finely.
- Crumble the feta cheese into a bowl. Add the cream cheese, egg, grated cheese, diced peppers, spring onion rings and chopped basil. Mix everything until creamy and season with salt and pepper.

Filling and baking:
- Fill the prepared cheese cream evenly into the pepper rings so that they are well filled.
- Bake the stuffed pepper rings in the preheated oven for 15-20 minutes until golden brown and crispy.

Serve:
- Remove the finished pepper rings from the oven and garnish with freshly chopped parsley.
- Serve hot and enjoy!
