Kohlrabi fries with paprika dip: A healthy and delicious recipe for students

Ingredients for 4 servings:

  • 3 kohlrabi
  • 2 tbsp wheat flour (type 405)
  • 6 tbsp olive oil
  • A pinch of salt
  • 1 tsp rose paprika
  • 1 garlic clove
  • 150g feta
  • A pinch of black pepper
  • 2 red peppers

Preparation:

Step 1: Prepare the peppers

  • Preheat the oven : Preheat the oven to 180 °C top/bottom heat.
  • Prepare the peppers : Wash the red peppers, cut them in half and remove the core. Place the pepper halves on a baking sheet with the skin side up.
  • Roasting peppers : Roast the peppers in the oven for about 20 minutes, until the skin begins to blister and turn slightly black.

Step 2: Prepare kohlrabi fries

  • Peel and cut kohlrabi : Peel the kohlrabi and cut it into stick-like fries.
  • Prepare the fries : Place the kohlrabi sticks in a bowl and add the flour, 3 tablespoons of olive oil, salt and paprika. Mix everything well so that the kohlrabi sticks are evenly coated.
  • Bake the fries : Place the prepared kohlrabi sticks on the baking tray next to the peppers and bake them in the oven for about 20 minutes until golden brown and crispy.

Step 3: Prepare the paprika dip

  • Let the peppers cool : Remove the roasted peppers from the oven and let them cool slightly.
  • Mix the dip : Peel the garlic. Put the cooled peppers, the feta, the garlic clove and 3 tablespoons of olive oil in a tall container. Puree everything into a creamy mass.
  • Seasoning : Season the dip with salt and black pepper.

Step 4: Serve

  • Remove kohlrabi fries from the oven : Remove the kohlrabi fries from the oven and let them cool briefly.
  • To serve : Serve the crispy kohlrabi fries with the creamy paprika dip.
