Preparation:

  1. Pour some hot water over the dates and let them soak for about 10 minutes.
  2. Mix the muesli mix, the oat flakes and chopped nuts, almonds or seeds.
  3. Puree the dates together with a little of the soaking water in a food processor or similar until you have a fine puree.
  4. Stir the sweetener and nut butter until smooth. If both are too solid, simply heat them briefly. Mix with the dry ingredients and the date butter. Knead everything well.
  5. Refine the muesli mixture as desired (see tips). Place in a small dish lined with baking paper (max. 20 x 30 cm). Press down firmly and leave to set in the fridge.
  6. Cut into bars with a sharp knife.

Tips and variations:

  • The basic recipe can be varied wonderfully. For example, dried chopped apricots, cranberries, dark chocolate, sultanas, apple chips, pistachios, vanilla or cinnamon go well.
  • Instead of almond butter, you can also use hazelnut butter, peanut butter, cashew butter, etc.
  • Normally, the bars become firm enough to cut when cooled. However, depending on the ingredients or the consistency of the date paste, they can remain a little soft. Reader tip: Bake at 175 degrees for 10-15 minutes.
  • The bars will keep in the fridge for about 1 week and can be easily frozen.
