Tarte flambée with yeast - simple instructions

With this recipe you can make your own tarte flambée dough with yeast quickly and easily. The result is a delicious, crispy tarte flambée topped with crème fraîche, ham and onions. Perfect for students!

Ingredients for 4 servings:

For the dough:

  • 500 g flour (type 405)
  • 30 g fresh yeast
  • 250 ml lukewarm water
  • 1 tsp sugar
  • 1 tsp salt
  • 6 tbsp sunflower oil
  • Some flour for the work surface

For covering:

  • 250 g crème fraiche
  • 1 pinch of salt and pepper
  • 100 g Black Forest bacon
  • 1 handful of herbs (e.g. chives)
  • 1 large onion
  • 1 pinch of fleur de sel (salt)

Preparation:

1. Preparation of the dough:

  • Put the flour in a bowl and make a well in the middle.
  • Mix the yeast well in a measuring cup with lukewarm water (approx. 38 °C).
  • Add sugar, salt and oil to the yeast mixture and stir with a whisk until sugar and salt have dissolved.

2. Knead the dough and let it rest:

  • Pour the liquid into the flour well and knead into a dough using a wooden spoon or the dough hook of the food processor.
  • Form the dough into a smooth ball on a floured work surface.
  • Cover the dough ball with a tea towel and let it rest in a warm place for 30 minutes.

3. Roll out the dough:

  • Cut the dough into four equal-sized pieces and use a rolling pin to roll out round tarte flambées with a diameter of about 25 cm.
  • Place each tarte flambée on a baking paper.

4. Prepare the topping:

  • Place the crème fraîche in a bowl and stir with salt and pepper until smooth.
  • Preheat the oven to 250 degrees top and bottom heat.
  • Cut the bacon into thin strips.
  • Wash the herbs, pluck them from the stem if necessary and cut them into large pieces.
  • Peel the onion and cut into slices.

5. Top and bake the tarte flambée:

  • Spread the crème fraîche mixture on the tarte flambée.
  • Spread bacon and onions on top.
  • Bake the tarte flambée for about 5 – 10 minutes until golden brown and crispy.
  • Sprinkle with fleur de sel (salt), pepper and chopped herbs.
