Simple linseed bread for students: healthy, delicious and cheap!

Linseed is not only rich in fiber and omega-3 fatty acids, but also a real all-rounder in the kitchen. This recipe is easy to prepare and requires only a few ingredients - ideal for a hectic everyday life!

Ingredients (for 1 loaf):

  • 100 g linseed
  • 400 ml boiling water
  • 300 g spelt flour type 630
  • 300 g whole wheat flour
  • ½ cube of fresh yeast
  • 1 tbsp salt
  • 1 tbsp honey
  • 100 ml lukewarm water
  • Some butter for the mold
  • 2 to 3 tablespoons of flax seeds
  • Some flour for dough processing
  • A little water for brushing

Preparation:

  1. Prepare flax seeds:

    • Put the linseed in a bowl and pour 400 ml of boiling water over it. Leave to soak for an hour. This ensures that the linseed releases its healthy ingredients and the dough becomes nice and moist later.
  2. Make the pre-dough:

    • In a large bowl, mix the spelt flour and whole wheat flour with salt and honey. Make a well in the middle and crumble the yeast into it. Pour the lukewarm water (100 ml) into the well and leave everything covered until the pre-dough starts to bubble. This takes about 15 minutes.
  3. To make dough:

    • Add the soaked linseed and the remaining liquid to the pre-dough. Knead with the dough hook of the hand mixer or by hand for about 5 minutes until you have a smooth dough. The dough should no longer be sticky and should be nice and elastic.
  4. Forming bread:

    • Grease a loaf pan (25 x 11 cm) well and sprinkle with the remaining linseed. Form the dough into a rope about 25 cm long on a lightly floured work surface and place it in the prepared pan. Cover and leave to rise in a warm place for about 30 minutes until the dough has visibly risen.
  5. Baking bread:

    • Preheat the oven to 200 degrees (fan oven: 180 degrees). Brush the bread generously with water to get a crispy crust. Bake in the preheated oven for about 45 minutes until golden brown. Take the finished bread out of the oven and let it cool in the tin.
