Quick blueberry pancakes for students

Want to whip up something tasty in the morning? The answer is these blueberry pancakes! This simple recipe for 12 mini pancakes is ideal for hectic university life. Here's a quick way to start your morning with a sweet treat!

Ingredients (for 12 pieces):

For the blueberry pancakes:

  • 200 g fresh blueberries
  • 200 g spelt flour (type 630 or wheat flour)
  • 1 teaspoon Baking powder
  • 50 g sugar
  • 1 pinch of salt
  • 150 ml milk
  • 2 eggs (size M)
  • 3 tbsp oil
  • some oil for the pan
  • Maple syrup for drizzling
  • Fresh blueberries for garnish

Preparation:

  1. Wash the blueberries and pat dry. Mix the flour, baking powder, sugar and salt in a bowl. Add the milk and stir to form a smooth dough. Stir in the eggs and oil.
  2. Heat a pan, add a little oil and spoon the batter into it. Carefully sprinkle the prepared blueberries into the batter. Cook the pancakes on both sides over medium heat until golden brown.
  3. Drizzle the finished pancakes with maple syrup and garnish with fresh blueberries.
