Quick blueberry pancakes for students

Ingredients (for 12 pieces):

For the blueberry pancakes:

  • 200 g fresh blueberries
  • 200 g spelled flour (Type 630 or wheat flour)
  • 1 teaspoon Baking powder
  • 50g sugar
  • 1 pinch of salt
  • 150 ml milk
  • 2 eggs (size M)
  • 3 tbsp oil
  • some oil for the pan
  • Maple syrup for drizzling
  • Fresh blueberries for garnish

Preparation:

  1. Wash the blueberries and pat dry. In a bowl, mix flour, baking powder, sugar and salt. Add milk and stir into a smooth dough. Stir in eggs and oil.
  2. Heat a pan, add a little oil and spoon in the dough. Carefully sprinkle the prepared blueberries into the dough. Fry the pancakes over medium heat until golden brown on both sides.
  3. Drizzle the finished pancakes with maple syrup and garnish with fresh blueberries.
